Crockpot Swedish Meatballs
Life’s been hectic around here lately. We’re having some construction work done to our home, our friends are moving out of our basement and into their new-to-them house, Collin starts goalie camp next week, school starts in a couple of weeks, and all the while we’re still trying to soak in what’s left of this sweet Michigan summer. With the hustle and bustle that the end of summer brings, I’ve been using my crockpot almost daily. I love being able to fill it up in the morning and then having a delicious meal ready by dinnertime. This Crockpot Swedish Meatballs recipe is a kid favorite and husband approved. A magical unicorn recipe, if you will, that makes everyone happy.
I made and shot this recipe to share for you earlier this week and friends, it was a sight to see. The construction crew showed up to our house and started some loud demo work, the kids were running around like fools, my dad showed up for a surprise visit, which got the kids even more riled up, and then our foster care case worker arrived to interview Collin which got our dog all rowdy. It. Was. A. Mess. Which is proof that this recipe is the easiest and quickest way to deliver dinner, right? You can even see the crew in the background of my ingredients photo, ha!
I start by adding a can of cream of mushroom, a can of beef broth, a packet of onion soup mix, and a couple tablespoons of A1 sauce to my crockpot. I use a whisk to stir it all up and get rid of any clumps.
Then I add in a bag of frozen meatballs and toss them into the sauce to coat.
I cook it on high for about three hours.
And then I add in about a cup of sour cream and stir it all together and switch my crockpot to the warm setting.
I cover it back up and then boil a bag of egg noodles in some salted water.
Once the egg noodles are cooked and drained, the Crockpot Swedish Meatballs are ready to serve. I simply make a little bed of noodles on a plate and then scoop a nice sized serving of meatballs and sauce right over the top. Delicious!
These Crockpot Swedish Meatballs are a kid-friendly dinner that are such a great solution to have on hand for when my schedule gets overloaded. I have a tendency to abandon all meal plans and opt for fast food when that happens, but by keeping a recipe like this one handy it helps me stay away from the drive thru.
- 1 can cream of mushroom soup
- 1 can beef broth
- 1 packet dry onion soup mix
- 2 tablespoons A1 sauce
- 1 (32 ounces) bag frozen meatballs
- 1 cup sour cream
- 1 (16 oz) package egg noodles
- Add cream of mushroom, beef broth, onion soup mix, and A1 sauce to crockpot and stir well.
- Add meatballs and toss to coat.
- Cook on high for three to four hours or high for seven to eight hours.
- Add sour cream and stir.
- In a separate pot, cook egg noodles according to package instructions and drain well.
- Serve meatballs over a bed of egg noodles.
