September is National Cholesterol Awareness month and if that’s not a perfect time to share a heart friendly recipe, well then I don’t know when is, ha!  A clinical study showed Mazola Corn Oil reduces cholesterol 2x more than extra virgin olive oil. To learn more about this claim, see swapping ingredients out, like a classic ranch dressing for a Mazola® Corn Oil based vinaigrette, I can take small steps to creating smarter meals for my family. Mazola Corn Oil is an all-purpose, cholesterol free cooking oil that is a smart heart-healthy* choice for your family.  *See for more information on the relationship between corn oil and heart health. It has more cholesterol-blocking plant sterols than other cooking oils – four times more than extra virgin olive oil and one and a half times more than canola oil. Clinical studies indicate that when consumed as part of a diet low in saturated fat and cholesterol, plant sterols can help reduce the absorption of cholesterol in the gut. This makes it my clear choice when creating heart friendly recipes and vinaigrettes for salads like this Chicken Bacon Avocado Salad with Lemon Vinaigrette.

I start by chopping up some romaine lettuce, tomatoes, and avocado and adding it all to a large mixing bowl. Swapping creamy ranch dressing for some avocado still gives me that creamy texture I crave, but with out the extra calories.

Then I add crispy bacon and grilled chicken (for busy weeks, I love to buy the already cooked grilled chicken breast strips from the frozen section – they heat up quickly in a pan with some Mazola Corn Oil in the bottom).

I toss everything together and then set it aside while I whip together the Lemon Vinaigrette. In a measuring glass, I add Mazola Corn Oil, lemon juice, white vinegar, garlic, oregano, salt, and pepper and whisk it all together.

Finally, I drizzle the vinaigrette over the freshly chopped salad. Just look at that pretty bowl filled with fresh greens and ripe tomatoes! A little bit of crispy bacon and plenty of creamy avocado. Delicious!
