With back-to-school on the horizon, I’m preparing for two little boys to begin Kinder with a little bit of excitement and a little bit of wistfulness. It’s been an activity-filled summer for us, and while I’m eager for the boys to begin this new chapter in their lives, the mama bear side of me wants to keep them under my wings forever. During preschool last year, both boys often requested that I make their lunch. Isn’t it funny how something like that makes them feel loved and special?

This year, I’m getting more creative with what I pack and one item I know will end up in their lunch pails frequently are my highly requested easy no-bake energy bites. These little balls of peanut butter, oats, coconut and honey pack loads of protein to keep their bellies full until they come home. By adding some colorful candy to the mixture, these tasty no-bake protein bites become a little extra fun, and the kids actually feel like they’re getting a treat rather than a healthy snack. In fact, my kids call them cookies because they’re so yummy – it’s like having dessert!

Let’s whip up a batch together, shall we?

To start, add some peanut butter, honey and vanilla to a mixing bowl and mix until they are completely blended into each other.

Next you’ll add some oats, shredded coconut, ground flaxseed, and some colored candies. Mix until everything is thoroughly combined.

Transfer the mixture to the fridge for about 10 minutes until it’s firm enough to shape and then mold into one to 2 inch-sized balls.

Store these in an airtight bag. We use Ziploc® brand bags with Easy Open Tabs since they’re sturdy and easy for the kids to open and to grab when they’re looking for a snack. Let’s be honest, friends. Ziploc® brand bags with Easy Open Tabs are a great storage option for any situation, am I right? Plus, I use those bad boys for just about everything in my home. Storing craft supplies, dishing out snacks, freezer meal storage and for packing extra undies (for an oops) for the boys’ on road trips.

  • Coralee May 8, 2016 at 8:22 PM

Can you make these without the coconut shreds?

    • Holly Sosa May 9, 2016 at 9:37 AM

Hi Coralee! I’ve never made them without the coconut, but if you leave it out, you’d have to add something else to bund them together. Perhaps more oats? Let me know how your experimenting works!

Thank You For the easy snack idea 🙂 Do you replacement ideas for the coconut? We are not big fans 😛

    • Holly Sosa August 16, 2016 at 4:50 PM

Hi Heidi! Unfortunately I haven’t figured out a replacement for coconut in these. I will say though that my mother in law hates coconut, but enjoys these very much!

    • Susan August 21, 2016 at 5:19 AM

I make these without coconut all the time. No replacement is needed. Just make them without the coconut. They hold together fine.

      • Holly Sosa August 21, 2016 at 4:24 PM

Thank you for the input, Susan! This is good to know!!!

  • Bianca Filardo August 31, 2016 at 11:24 AM

Love this snack idea especially for long days at school. I also love ziploc bags for so many things. When I ca, for dry snacks, I prefer to use cotton food-safe bags I can reuse.

  • Diana September 15, 2016 at 11:06 AM
