Oven Roasted Smoked Sausage and Potatoes

Our family is currently co-habiting with our best friends who moved here to Northern Michigan from Southern California, just like we did! They and their three children are staying with us until they can find a house they love enough to buy and while they transition to life here in our new snowy state, which means we have a whole ‘nother family with us over the holidays! It’s been an adventure and one we’re all really excited about! Mealtime has become quite a challenge, though, and feeding two families over the holiday season means meals have to stretch further than ever before.

Thankfully, I can rely on trusted brands like Eckrich Smoked Sausage, with their wide variety of flavors and forms, including rope and links that help me to provide delicious dinnertime solutions that are affordable, easy, and stretch effortlessly over our two families. My Oven Roasted Smoked Sausage and Potatoes is one of my favorite meal solutions because it’s super tasty, very affordable, and practically impossible to mess up, ha!

First, I slice my Eckrich Smoked Sausage into rounds. I love Eckrich for its naturally hardwood smoked flavors that are crafted with just the right blend of spices for a truly rich, savory taste.

I cut up some potatoes into bite sized chunks and dice an onion super fine.

I toss the potatoes, onions, and sausage into a large bowl and add olive oil, salt, pepper, some paprika, and a bit of thyme.

I transfer it all into a baking sheet that I lined with tinfoil and olive oil and bake in a 400F degree oven for about 45 minutes, tossing the sausage and potatoes every ten or fifteen minutes or so.

Once the potatoes are tender and golden, I remove the baking sheet and sprinkle cheddar cheese over the top before placing it back in the oven to melt the cheese for about five or so minutes.

Once the cheese has melted into ooey, gooey goodness, I remove the baking sheet and dinner is ready! I typically serve Oven Roasted Smoked Sausage and Potatoes alongside some steamed veggies or a side salad. It makes an excellent addition to holiday potlucks, parties, and events since it’s so easy to throw together and the Eckrich Smoked Sausage offers a great, versatile flavor.

Using Eckrich helps me to deliver flavor and comfort without a ton of time in the kitchen, allowing me to enjoy the extra time with our friends and family. It’s always readily available at the deli section in several of my local grocery stores.

Oven Roasted Smoked Sausage and Potatoes

Ingredients

  • 1 package Eckrich Smoked Sausage
  • 1 large onion, finely diced
  • 5-6 large potatoes, diced
  • olive oil
  • salt, to taste
  • pepper, to taste
  • paprika, to taste
  • thyme, to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Toss sausage, potatoes, and onion in a large bowl with olive oil to coat.
  2. Transfer to baking dish prepared with tinfoil and olive oil.
  3. Bake in 400F degree oven for 45 minutes, tossing ever ten minutes, until potatoes are tender and golden.
  4. Remove from oven and sprinkle cheese over top.
  5. Return to oven and bake an additional five minutes or until cheese is melty.
  6. Serve immediately.
