Summer is nearly here and for me there’s nothing better than enjoying a fabulous sparkling beverage on my front porch while blasting country music and watching my kids ride their bikes on the sidewalks. It’s in those moments all is right in the world and I remember just how very blissful life can be.
My Peach and Thyme Spritzer is one of my favorites to make because it’s refreshing, slightly sweet, and delicious. This version of the Peach and Thyme Spritzer is my lazy summer afternoon version, though I will say, pan roasting the peaches and thyme together with honey makes for a delicious beverage. However, this quickie lazy girl version is more my pace when it comes to front porch sittin’. It’s inspired by the slightly sweet flavors of the organic sparkling fruit beverage SANPELLEGRINO® Pesca &tè (they also offer a Limon flavor) that I ordered for pick up from my local Walmart.
This new and surprisingly flavorful blend is made with delicious tea extract and Italian fruit juice from concentrate. Made with organic USDA certified ingredients, SANPELLEGRINO® Pesca &tè has only 50 calories and contains a combination of tea extract, organic cane sugar, light carbonation, and the juice of peaches and lemons from Italy. It’s delicious all on it’s own and you must try it, friends. But sometimes, even a lazy girl wants fruit in her beverage, so I created this mocktail.

I start by adding about a tablespoon of honey to the bottom of my cup.
Then I add some ice and a can of SANPELLEGRINO® Pesca &tè.
I add a splash of tonic water and I finish it off with some peaches that I cut fresh and then muddled.
For the grand finale, I add in some fresh thyme that I plucked right from my thyme plant in my windowsill.
It’s that simple. Fellow lazy girls, I give you your signature summer drink.
The combination of sweet peach and fresh thyme is the perfect summer duo that I could drink all afternoon while watching my bow bedazzled little one color on the porch.
