Raspberry Walnut Pork Salad

Here in Northern Michigan, I’ve been waiting with bated breath for warmer weather to show her beautiful face. And I think it’s finally safe to say it’s here! Snow is melted, grass is green, tulips are emerging, and the robins are feasting on earthworms. I’m so excited that I’m already dreaming of eating sliced watermelon on the front porch, picking strawberries, and all the comes with the sweet summers of Michigan. While I wait, I’m enjoying summer flavors like my Raspberry Walnut Pork Salad. It’s a perfect blend of sweet and fresh, tangy and comforting.

For this recipe, I was able to grab all of the freshest ingredients, including the dressing, pork, and greens, at my local Walmart. 

I start by grilling up a few Smithfield® All Natural Boneless Pork Chops. I love Smithfield because they work with farm families across the US to bring me naturally tender and juicy pork. They offer high quality All Natural Fresh Pork that makes it easy for me to cook for my family. I literally just have to take these from the package and into a pan!

The pork chops get placed in a hot pan, turning over once to cook each side. As they cook, I season each side with a little salt and pepper. When they’re completely cooked through, I removed them from the pan and to a plate to rest.

While the pork chops rest, I get to chopping and chop up some romaine lettuce and add it to a large salad bowl with some fresh spinach.

Next I chop some red onion into thin slices and add it to the bowl.

Then I take the pork chops and slice them up.

They go into the bowl along with everyone else.

Then I add some feta cheese and chopped walnuts to the party.

I prefer to not add dressing to my salads until they’re served in bowls. That way the salad stays fresh if there are leftovers and I can enjoy it again later. But raspberry vinaigrette is the only choice for this tangy salad. 

The juicy and tender slices of pork add a level of comfort to this tangy flavored salad that makes all your taste buds come alive. So many flavors it’s the most glorious salad I ever did make!
