Savory Corn Casserole

I’ve got one kid in hockey and another in figure skating. I essentially live at our local ice arena during the week. Oh, who am I kidding, weekends too. With these busy evening schedules, I’ve had to learn to adapt dinnertime with easier make ahead meals that allow me to get my family fed quickly. As a foodie, I’m not one to sacrifice taste, so I’ve worked hard to ensure my solutions still taste delicious. One of my favorite successes has been this Savory Corn Casserole. It’s super creamy, slightly spicy (thanks to good ol’ TABASCO®), and filled with savory bacon and zesty green onion. It’s a become one of my favorite dinnertime solutions during the busy winter months.
This recipe is so easy, I almost feel guilty calling it a recipe, ha! Ready, folks? Grab a bowl, add a box of cornbread mix, a drained can of corn, a can of creamed corn, a cup of sour cream, and a melted stick of butter. Mix it all together.
Add a couple tablespoons of TABASCO® Green Jalapeño Sauce to enhance the flavor a bit and stir.
Transfer to a prepared square baking dish and bake in a 350F degree oven for about 45 minutes.
Ding. Dang. Done. So easy. So much yum. So much flavor flave.
Typically I make this with smoked sausage fried up over the stove and a side of steamed broccoli for a quick and easy dinner. And I always keep a bottle of TABASCO® Green Jalapeño Sauce at the table when I serve this because, well because yum, and so that everyone can personalize their food. The green Sauce is made with jalapeños, for flavor that’s not too wild and not too mild. It is the TABASCO® Sauce flavor with the lowest Scoville Heat Units, which makes it friendly enough for everyone in my family.
- 1 can creamed corn
- 1 can corn, drained
- 1 cup sour cream
- 1 box (8 ounces) cornbread mix
- 1/2 cup butter, melted
- 2-3 tablespoons TABASCO® Green Jalapeño Sauce
- Mix all ingredients together in a large bowl.
- Transfer to a prepared square baking dish.
- Bake in a 350F degree oven for 45 minutes.
