Summer Pasta Salad

Friends, summer is just around the corner and this Northern Michigan gal can hardly wait! The warmer weather has already given me the opportunity to break out my fire pit and start enjoying all of my favorite summer staples. Roasted hot dogs, fresh watermelon, all the s’mores, and cold summer pasta salad. I’ve partnered with Voortman Bakery to bring you one of my all time favorite Summer Pasta Salad recipes as they help me welcome summer with their limited edition S’mores Wafers. If you’ve been following me for awhile, you know how much I look forward to these s’mores wafers every year! Pair them with my delicious Summer Pasta Salad and you’ve got a flavorful summer spread that satisfies all your best summer cravings.
To make my Summer Pasta Salad, I start with the dressing. In a large jar, I add some vegetable oil, rice vinegar, brown sugar, sesame oil, soy sauce, and sesame seeds. I give it a good shake and then set it in the fridge to get cold.
Next, I boil some bowtie pasta until al dente, drain it, rinse it under cold water, and add it to a large bowl.
Then I add some already cooked chicken (this is a perfect recipe for that grocery store rotisserie chicken we all love!).
Then in goes some shredded carrot, red bell pepper, cilantro, sliced almonds, and green onion.
I toss the salad until all the ingredients have incorporated together and then drizzle the dressing I made earlier all over the top, tossing again to coat everything.
This can be served immediately, but I like to let everything marinate together for a few hours before serving so I cover the bowl and pop it into the fridge until I’m ready to serve it. If I do it this way, I leave the almonds and green onions out to keep them from getting soggy.
I also like to make an extra batch of the dressing because the pasta can really soak up the dressing while it sits, so I prefer to have some extra for those of us who like some salad with our dressing.
This Summer Pasta Salad is a perfect staple for summer picnics, barbecues, and gatherings. I love to bring this salad and a couple of packs of Voortman Bakery S’mores Wafers anytime I show up at a bonfire. They’re the perfect duo!
