A creamy, hearty soup made with extra lean ground beef, tender potatoes, and a medley of veggies, all the comforting flavors of a cheeseburger in a cozy bowl.
In a large pot, melt one tablespoon over butter over medium heat. Add ground beef, onions, carrots, & celery. Cook & crumble until ground beef is browned.
Add basil & parsley & stir until incorporated with the beef.
Add potatoes & broth. Bring to a boil & then reduce the heat to low. Simmer until potatoes are fork tender.
In a small saucepan, melt the remaining three tablespoons of butter over medium heat. Add flour & whisk until smooth.
Gradually whisk in milk and simmer, whisking occasionally, until the sauce has thickened.
Stir cheese sauce into the soup, stirring constantly. Bring soup to a boil & then reduce heat to low & stir in shredded cheese a little at a time until melted.
Add sour cream & stir until incorporated & soup is heated through.
Serve immediately!
