Cheeseburger Soup

A creamy, hearty soup made with extra lean ground beef, tender potatoes, and a medley of veggies, all the comforting flavors of a cheeseburger in a cozy bowl.

Ingredients
  

  • 4 tablespoons butter divided
  • 1/2 pound extra lean ground beef
  • 3/4 cup onion finely diced
  • 3/4 cup shredded carrots
  • 3/4 cup celery finely diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 cups potatoes cubed
  • 3 cups chicken broth
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 2 cups extra sharp cheddar shredded
  • 1/4 cup sour cream

Instructions
 

  • In a large pot, melt one tablespoon over butter over medium heat. Add ground beef, onions, carrots, & celery. Cook & crumble until ground beef is browned.
  • Add basil & parsley & stir until incorporated with the beef.
  • Add potatoes & broth. Bring to a boil & then reduce the heat to low. Simmer until potatoes are fork tender.
  • In a small saucepan, melt the remaining three tablespoons of butter over medium heat. Add flour & whisk until smooth.
  • Gradually whisk in milk and simmer, whisking occasionally, until the sauce has thickened.
  • Stir cheese sauce into the soup, stirring constantly. Bring soup to a boil & then reduce heat to low & stir in shredded cheese a little at a time until melted.
  • Add sour cream & stir until incorporated & soup is heated through.
  • Serve immediately!

Notes

Optional toppings: bacon crumbles, green onion, sour cream, croutons.
