Irish Soda Bread

Ingredients

  • 1 3/4 cup buttermilk
  • 1 egg
  • 4 1/4 cups flour plus more for your hands & counter
  • 3 tbsp sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 5 tbsp unsalted butter cold & cubed

Instructions

  • Preheat oven to 400℉. Line a dutch oven with parchment paper.
  • In a medium bowl, whisk together buttermilk and egg. Set aside.
  • In a large bowl, whisk together flour, sugar, baking soda, and salt. Cut in the butter using a fork, your fingers, or pastry cutter until mixture forms into pea sized crumbs.
  • Add egg/buttermilk mixture and fold dough together until too stiff to stir. Dough will be crumbly.
  • Transfer dough to a floured surface and with floured hands work into a ball. Knead for roughly one minute or until all flour is incorporated.
  • Transfer dough to prepared dutch oven. Using a sharp knife, score dough with an X about 1/2 inch deep.
  • Bake uncovered for 50 minutes until bread is golden brown.
  • Remove from oven and allow to cool for 10 minutes before transferring to wire rack. Serve warm, room temperature, or toasted.
