Egg Roll in a Bowl
A quick, budget-friendly weeknight dinner, this Egg Roll in a Bowl brings all the savory flavors of an egg roll (minus the wrapper) in one easy skillet meal.

Ingredients

ground pork

package coleslaw mix
16 ounces

cup
soy sauce
1/4
cup
toasted sesame oil
1
tbsp
grated ginger
1
clove
garlic
minced

tbsp
lemon zest
1
tsp
cilantro
chopped
Instructions
In a large skillet over medium heat, cook the pork until browned and crumbly.
To the skillet add the coleslaw mix, soy sauce, sesame oil, ginger, and garlic. Cook until coleslaw softens.
Add in the lemon zest and cilantro. Cook just until the flavors combine (about two minutes).
Serve immediately.
Notes
Serve garnished with sesame seeds, green onion, and sriracha.
