Egg Roll in a Bowl

A quick, budget-friendly weeknight dinner, this Egg Roll in a Bowl brings all the savory flavors of an egg roll (minus the wrapper) in one easy skillet meal.

Ingredients
  

  • 1 pound ground pork
  • 1 package coleslaw mix 16 ounces
  • 1/4 cup soy sauce
  • 1/4 cup toasted sesame oil
  • 1 tbsp grated ginger
  • 1 clove garlic minced
  • 1 tbsp lemon zest
  • 1 tsp cilantro chopped

Instructions
 

  • In a large skillet over medium heat, cook the pork until browned and crumbly.
  • To the skillet add the coleslaw mix, soy sauce, sesame oil, ginger, and garlic. Cook until coleslaw softens.
  • Add in the lemon zest and cilantro. Cook just until the flavors combine (about two minutes).
  • Serve immediately.

Notes

Serve garnished with sesame seeds, green onion, and sriracha.
