If there’s one thing I need in my meal rotation, it’s quick, budget-friendly dinners that actually fill up my family. With five kids (including two always-hungry teenage boys), I don’t have time for fussy meals or expensive ingredients. That’s why Egg Roll in a Bowl has become a weeknight lifesaver in our house. It’s fast, packed with flavor, and won’t break the grocery budget.
Why You’ll Love Egg Roll in a Bowl

This dish has all the flavors of a classic egg roll but without the deep frying or extra work. It’s a one-pan meal, which means fewer dishes (yes, please), and it comes together in under 30 minutes. Plus, it’s easy to customize; swap the ground pork for chicken or turkey, throw in extra veggies, or even serve it over rice for extra heartiness.
And since we’re welcoming in spring, let’s talk about the fresh lemon juice. A squeeze of lemon at the end adds the perfect bright, citrusy kick that balances out the savory soy sauce and garlic. It’s a simple touch, but trust me. It makes a difference.
Budget-Friendly & Family Approved

Keeping meals affordable is always a top priority in our house, and this one checks all the boxes. Cabbage, ground meat, and pantry staples make up the bulk of the ingredients, which means you’re getting a hearty, nourishing meal for just a few dollars per serving. And best of all? My kids actually eat it. No complaints, no picking around the veggies; just happy, full bellies.
Make It a Full Meal

If you want to stretch this dish even further, serve it with:
- Steamed rice or cauliflower rice for extra bulk
- A drizzle of sriracha or sweet chili sauce for added heat
- Egg roll wrappers or lettuce cups for a fun twist
Egg Roll in a Bowl is one of those meals that proves dinner doesn’t have to be complicated to be delicious. It’s quick, it’s affordable, and it brings all the takeout flavors we love into an easy, homemade meal. Give it a try this week. I have a feeling it’ll become a regular in your house too!
