Lemon Chicken Rice Skillet
Ingredients
- 2 boneless skinless chicken breasts cut in half lengthwise to make four cutlets
- 2 tbsp butter
- salt & pepper to taste
- 2 tsp italian seasoning
Rice
- 1 cup rice
- 2 1/4 cups chicken broth
- 1 lemon juiced & zested
- 1 tsp italian seasoning
- 1 tbsp chicken bouillon
Instructions
- Melt butter in a large skillet or pan. Season the chicken with the salt, pepper, and italian seasoning. Sear chicken in the butter for 2-3 minutes per side (chicken does not need to be cooked through yet). Transfer chicken to a plate.
- To the skillet add rice, chicken broth, lemon zest, lemon juice, italian seasoning, and chicken bouillon. Place the chicken on top, cover and simmer over medium heat for 20-25 minutes or until liquid is absorbed.
- Garnish with lemon wedges and parsley. Serve!
