Lemon Chicken Rice Skillet

Ingredients
  

  • 2 boneless skinless chicken breasts cut in half lengthwise to make four cutlets
  • 2 tbsp butter
  • salt & pepper to taste
  • 2 tsp italian seasoning

Rice

  • 1 cup rice
  • 2 1/4 cups chicken broth
  • 1 lemon juiced & zested
  • 1 tsp italian seasoning
  • 1 tbsp chicken bouillon

Instructions
 

  • Melt butter in a large skillet or pan. Season the chicken with the salt, pepper, and italian seasoning. Sear chicken in the butter for 2-3 minutes per side (chicken does not need to be cooked through yet). Transfer chicken to a plate.
  • To the skillet add rice, chicken broth, lemon zest, lemon juice, italian seasoning, and chicken bouillon. Place the chicken on top, cover and simmer over medium heat for 20-25 minutes or until liquid is absorbed.
  • Garnish with lemon wedges and parsley. Serve!
