Grandma Sanford's No Bake Cookies

Ingredients
  

  • 1/4 cup butter
  • 1 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 2/3 cup creamy peanut butter
  • 1 tbsp vanilla extract
  • 3 cups quick cooking oats
  • 1/8 tsp salt

Instructions
 

  • In a large sauce pan, combine butter, sugar, milk, and cocoa powder and melt together over medium heat, whisking occasionally.
  • Once mixture reaches a boil, stop whisking and allow to boil for a complete minute.
  • Remove from heat and immediately stir in peanut butter and vanilla. Once peanut butter is fully incorporated, stir in oats and salt.
  • Allow mixture to sit for a moment while you line your counter or baking sheets with parchment paper.
  • Use a spoon or cookie scoop to scoop dough onto baking sheets.
  • Allow to set for an hour. They will harden to a fudge-like consistency.
  • Enjoy at room temperature or in the fridge for a slightly harder bite.
