There’s not much better than a homemade treat that’s quick, delicious, and brings a little nostalgia to your kitchen. My Brown Sugar Cinnamon Pie Crust Pop Tarts are exactly that, a simple, satisfying breakfast or snack made with minimal effort but maximum flavor.
If you love the classic boxed version of this beloved toaster pastry, you’ll love this easy homemade upgrade. By using store-bought pie dough (if you prefer to make your own, this recipe is great), these pop tarts come together in no time, making them perfect for busy mornings, after-school snacks, or even a sweet addition to your weekend brunch spread.
Why You’ll Love This Recipe

- Easy Shortcut: Using pre-made pie crust eliminates the need for homemade dough, making these pop tarts super simple.
- Customizable Flavors: While brown sugar cinnamon is a family favorite, you can easily swap in other fillings like fruit preserves, Nutella, or even peanut butter and jelly.
- Better Than Store-Bought: The flaky pie crust and warm, spiced filling take these pop tarts to the next level. No artificial flavors, just homemade goodness.
Tips for the Perfect Pop Tarts

- Seal the Edges Well: Use a fork to crimp the edges of your pop tarts to prevent the filling from leaking out during baking.
- Don’t Overfill: A little filling goes a long way! Too much can cause the pop tarts to burst open.
- Make Them Extra Special: Brush the tops with an egg wash for a golden, bakery-style finish and drizzle with a simple vanilla glaze for that classic frosted look.
How to Store and Reheat
These pie crust pop tarts can be stored in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. To reheat, pop them in a toaster oven or warm them in the microwave for a few seconds.
Perfect for Any Occasion

Whether you’re meal-prepping breakfast for the week, looking for a fun baking project with kids, or just craving a cozy, cinnamon-filled treat, these homemade pie crust pop tarts are a must-try. They bring all the comfort of a classic toaster pastry with the added joy of a homemade touch.
